Green Bean Casserole (from scratch)

Crisp-tender beans with real mushroom sauce and crunchy onions.

Ingredients

  • 1 lb green beans, trimmed and halved
  • 8 oz mushrooms, sliced
  • 3 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1/2 cup chicken broth
  • 1/2 cup crispy fried onions
  • Salt & pepper

Instructions

  1. Blanch beans in salted boiling water 4 minutes; shock in ice water and drain.
  2. Sauté mushrooms in butter; sprinkle flour and cook 1 minute.
  3. Whisk in milk and broth; simmer to thicken. Season with salt & pepper.
  4. Combine beans with sauce in baking dish; top with fried onions; bake 20–25 minutes at 375°F.
