Classic Roasted Turkey

A foolproof, juicy roasted turkey with crispy skin.

Ingredients

  • 1 whole turkey (12–16 lb), thawed
  • Kosher salt & black pepper
  • 4 tbsp softened butter (or olive oil)
  • 1 onion, quartered
  • 1 lemon, halved
  • Fresh herbs (thyme, rosemary)
  • 2 cups low-sodium chicken stock

Instructions

  1. Remove giblets; pat turkey very dry with paper towels. Let sit at room temp 45 minutes.
  2. Heat oven to 325°F. Set rack in lower third. Place turkey on rack in roasting pan.
  3. Season cavity with salt and pepper; stuff with onion, lemon, and herbs. Tuck wings under.
  4. Rub skin with butter; season generously with salt and pepper.
  5. Roast about 13 minutes per pound, adding stock to pan and basting occasionally.
  6. When breast reads 160–165°F and thighs 170–175°F, remove and tent with foil 30 minutes.
  7. Reserve drippings for gravy; carve and serve.
