Classic Roasted Turkey
A foolproof, juicy roasted turkey with crispy skin.
Ingredients
- 1 whole turkey (12–16 lb), thawed
- Kosher salt & black pepper
- 4 tbsp softened butter (or olive oil)
- 1 onion, quartered
- 1 lemon, halved
- Fresh herbs (thyme, rosemary)
- 2 cups low-sodium chicken stock
Instructions
- Remove giblets; pat turkey very dry with paper towels. Let sit at room temp 45 minutes.
- Heat oven to 325°F. Set rack in lower third. Place turkey on rack in roasting pan.
- Season cavity with salt and pepper; stuff with onion, lemon, and herbs. Tuck wings under.
- Rub skin with butter; season generously with salt and pepper.
- Roast about 13 minutes per pound, adding stock to pan and basting occasionally.
- When breast reads 160–165°F and thighs 170–175°F, remove and tent with foil 30 minutes.
- Reserve drippings for gravy; carve and serve.
